Leek and bacon pasta

This is an incredibly easy recipe. I've learned this from an Italian and have cooked it again and again as it is one of our staples. It is pure simplicity and a great combination of ingredients that just go well together.

Ingredients
- 250 g pasta use penne or fusilli
- 125 g smoked bacon, chopped
- 2 leeks, cut in rings
- vegetable oil
- 2-3 tbsp olive oil
- parmesan, freshly grated
- salt
- pepper
Instructions
- STEP: In a seasoned steel pan or cast iron skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the leeks, fry shortly and season with salt. This will break the leek. Cook for about 10 mins until very soft.
- STEP: Meanwhile, cook the pasta following pack instructions.
- STEP: Add the bacon to the leeks, and fry until cooked. Season and take it off the heat. Add olive oil into the leek and bacon mix, to help the sauce coat the pasta.
- STEP: Add the leek and bacon mix to the cooked pasta and top it with parmesan (we like it with a lot of it).
